| In India sweets are generally called as Mithai. These are a type of confectionery. Sugar, milk and condensed milk are the main contents and many are prepared by frying. From place to place the type and base of the sweet vary greatly. Especially in the eastern part of India milk is an unavoidable item and hence most sweets are made using milk. Each and every sweet in the past were prepared in house before the now famous sweet stalls captured our attention. Some of these famous sweets are discussed here. Barfi is a famous Indian sweet that is available in most of the restaurants in Gurgaon. This is made up of dried milk along with cashew nuts and pistas. For decoration a thin delicate layer of silver foil is spread on the top of this sweet. Chikki is another famous item prepared by Indians during special occasions. They are made up of peanuts and molasses. Gulab Jamun is a sweet item which is dipped in sugar solution for many days. Sugar solution keeps on dripping from this. This is a fried item made up of all purpose flour, yeast and soda. They are fried milk balls soaked in sweet syrup. Jalebi is made by deep frying all purpose flour in a coil shaped structure by making the flour batter dip through a thin porcelain cloth. These fried pieces are then dipped in sugar syrup until soft. This is usually reddish in color and can be taken along with milk, tea or lassi. Khaja is another sweet item which is the specialty of Orissa and Bihar states. Refined flour, sugar and oil are the main addends. The Gangetic planes of Bihar are known as the house of Khajas. The city of Patna, Gaya etc prepare and sell Khajas and this is a main cottage type small scale industry in Bihar. This is prepared from wheat flour, mawa and oil. Then crispy croissants are made which are then dipped in sugar syrup. It seems to be dry on outside but juicy inside. Kulfi is a type of Indian ice cream in which milk or cream is frozen using small metal cans. It is also has a sweet milky appearance. Additional colors are also added and the sweets are displayed as layers in ice cream which appear to be too enticing. In a summer season, it is indeed a super hit in most parts of India. Different flavors are available as per the need of the customers. Mango, elaichi and kesar are the ones that are usually in great demand. Kheer is actually a pudding made using rice, ghee, milk and sugar. It is better known as payasam in South India. This is a special item served at all the occasions, feasts, ceremonies etc. It is a belief that any special occasion incomplete without payasam being served at the dining area.
